Lol at guy criticizing ramen based on two Korean owned places in Atlanta.

Those two korean places make the best ramen in Atlanta. It's better than japanese owned ramen shops here. Haru Ichiban owner might be korean but he grew up in Japan. The people who eat at his restaurants are Japanese expats and Japanese visiting here.

I don't hear people talking shit about Momofuku because David Chang is korean. His Momofuku Noodle Bar is partially to blame for spreading the hipster's love of fancy ramen.

BTW, I took that ramen pic from the Tori Paitan ramen I had at Mensho Tokyo SF. http://www.sfchronicle.com/food/eatup/article/Mensho-ramen-is-San-Francisco-s-new-gold-9962907.php Last I checked, it was Japanese owned place. Does that make my criticism valid now? Or do I need to eat at Japanese owned place in Japan in order to properly criticize?

And "best Korean in Boise" might be good as "best Korean in LA" or "best Korean in Korea." Who knows. You think Japanese are the only culture with noodle dish that's made with all day cooked broth and noodle?

I had this fancy ramen the other day. The pork chashu was good. The duck chashu was good. The chicken broth was rich and creamy. It was fine bowl of ramen. But if I never eat it again, I wouldn't miss it. It's that simple.


But if I don't eat instant ramen like this Shin Ramyun, I might die. I know I will miss it if I go more than a week without eating it.

Hilarious. So, you just love salt.

In most kitchens, hispanics are the ones doing the food prepping and cooking. Cooking is not rocket science.

My vote is Japanese ramen. It's good but the pork, chicken, or soy broth does nothing for me.
Need to eat at better ramen joints

That said, it's funny that most gaijin make a beeline for ramen at the airport.
I'm much happier with a don and kare, or maybe an omurice

I think caviar, truffles and bone marrow are incredible. But uni doesn't do it for me, I don't get the love.

I always thought that was an acquired taste. Ordered it once mistaking raw sea urchin with fried fish egg... :shudder:

I actually spent a week in Greece and although their gyros are great, it was pretty much all the had lol. By the 4-5th day I was dying to go back to Italy.
I spent two weeks in Greece (Athens, Santorini, Meteroa, Corfu, Ioannina). I ate out all meals that whole trip. In every case, I tried to find a restaurant that served Gyros. I eventually did find one single restaurant which was a fast food type with it on their menu--only to find out that they were "out" that day of the ingredients.

We must have had the exact opposite Greek vacation.

I love gyros sandwich but I dislike it with fries added inside the sandwich. Adding fries inside the sandwich trend needs to be stopped. Keep the fries separate and let me add it together inside my mouth.

Cheesecake: Made at home or small pastry shop and you can easily tell the difference. You can taste the freezer burn at the big box restaurants.

Bacon: Get salt brine cured bacon from the belly and not the shoulder or back. Make sure it is not honey, smoked or any other type of post processing. While you're there at the grocery store, pick up a small jar of "Filé" powder, over in the spices aisle/rack. Line a baking sheet with foil and prep the oven for 400. Put the bacon strips on the foil then sprinkle the file powder along the strips.

Bake for 12 minutes and check the crispiness level. Never let it go longer than 20 minutes.

My most overrated foods:
Cheesecake. It's sorta good sometimes, but that's it. I've never had a cheesecake that really impressed me.
Bacon. See cheesecake.

Fried eggs on most things. I love eggs. I love fried eggs. But a fried egg on a hamburger makes both of them worse.

Avocado. Other than in guacamole, it has no use as a foodstuff.

After 8 years in CA, I couldn't agree more. Those bastards put avocado on everything, and there really is no place for it other than guacamole. "No, I do not want the fucking avocado on my omelette. I do not want the fucking avocado on my chili fries. Or my lamb burger. Nor do I want avocado in my bloody mary, you fucking assholes!"

I kinda see his point. I love good ramen, but I find that the time and effort to make it, or the ave cost for "good" ramen at a ramen joint really isn't worth it, for what ramen is. More and more, it's about $14 on the low end for what is considered a high-end bowl of ramen, but usually $18 or more. I've had decent ramen for $10 or $11, but even that is nuts. Even so, it takes about a night of vigorous boiling to emulsify those itty bitty fat bits properly into the broth which, in the end, is nothing more than a handful of typical spices, some fatty animal bits and bone, and butter. It's just too simple and uncomplicated for the actual effort and cost. For that, I would rather have a $0.98 bag of Shin instant ramen, toss in some mushrooms and greens, and maybe some jerky to get a good enough approximation. Also for these reasons, why I find pho to be so much better, because it's at most half the cost for what is essentially the same dish. Heh, I didn't even mention the effort that goes into making "proper" noodles, which just borders on insanity. I recall David Chang saying how he spent those 3 years or however long apprenticing in Japan at that fancy Ramen joint, and the head chef never approved for service a single noodle that he made. lolwtf.
