Until I saw the $2k part, I was going to say "what's wrong with replacing the cat?"
I wasn't even aware there was a type of cat that cost that much. It sounds more like she is trying to get a lot of extra money out of you.
Ok, I had a similar experience. My wife had a breeding ragdoll (yes, it was actually worth about 2k). It would sometimes go into our front porch area (fenced off) and wouldn't leave the property.
There was another neighbor (well, a lady about a mile away) who would let her dogs out to urninate/defecate by simply letting them roam the neighborhood. Well, one day she did that they ran across our cat, jumped the little fence and killed her.
Since it happened on our property (her dogs were a mile from home, our cat was on the property) the cops highly recommended she pay for the cost of the cat (no pain or suffering or loss of business reveneu [the last you could sue for in small claims, no pain/suffering]). We just asked her for the actual purcahse cost and she paid it.
Point being, the cat could be worth that much. But if our cat had gone into her yard and this happened, I would have offered to reimburse the vet fee for putting her down. Given the situation, sounds like you acted above and beyond what is even reasonable (good for you, even if she is nuts, karma will reward you eventually )
