Adblock Plus. Goes without saying. Should be a standard install for everyone.
Beyond that, I've loaded a dozen or so additional extensions. Some favorites:
Context Menu Searech. Add search engines to the context (right-click) menu. Highlight any text in a web page and launch just about any kind of search you like on that text. I've used and abused this thing so much that I couldn't live without it. I have about 25 different search URLs defined. Shopping sites like Amazon, Newegg, eBay, the local Craigslist, even Anandtech and HardForum's For Sale forums, to Wikipedia and Google and Bing maps. Beats the hell out of typing, or even having to drag text into the address bar.
Edit This Cookie. Can selectively delete some or all cookies on a site. A lot handier than having to go through Chrome's Settings > Advanced Settings > Privacy > etc. > etc.
Window Resizer. Simple extension that ads a button to the toolbar, that you can use to quickly resize the browser window according to presets that you define. Handy, because I usually keep the browser a certain size, but find that many sites require a larger window to be navigated without horizontal scroll bars.
My new favorite:
ImprovedTube. When you're on YouTube.com, it can automatically resize videos to your liking, such as fitting the width of the browser window, plus you can have it automatically do things like set the video quality to 720p and hide annotations and comments.
Others:
Simple Calendar. Handy little calendar viewer that can be called from a button in the toolbar.
Stylish. Nice if you know a little CSS. You can completely redefine how a web site looks, although it's a little foolish to spend the time to do that, since the design can change at any time. I use it mostly to 'fix' problems, like sites that use too small of a font, or to change the color of things that I find hard to see.
Speed Dial 2. This one is actually used more than all others combined. The Home page of the browser can be set to a tabbed set of pages showing thumbnails with links to favorite sites. Easier and quicker than using favorites.
