The saliva is on there either way, so it's not more sanitary for the person receiving the letter. Your hands are constantly touching all sorts of surfaces... your hands are a haven for a large variety of bacteria. Your hands have more bacteria than a toilet seat. I don't go around licking toilet seats... why would I lick my hand or a part of my hand???
edit: I don't think flavors can be patented. (hence so much secrecy for certain recipes) I don't think you'd succeed in getting a patent for flavored envelopes.
