The escorts I have seen range from someone I wouldn't touch to model quality...which is the same as anyone can date.
Most guys can't get hot women not because their looks, but their attitudes. Women like appearance, but for most it's not the same as how guys look at things.
A woman is usually looking to be entertained with the guy as a complete package....they want to laugh, be with someone confident, etc. A typical guy is just looking face / body most of the time and if they are kids hoping she hasn't had sex too much yet.
#1 way to get a date though is be out there as much as possible. If that means hitting your local hangouts, searching the date sites, talking to friends...do it.
Also one of the worst ways is to head out with a bunch of guy friends. Usually even 2 is pushing it. It limits you so much if you are looking for a chick. It's fine to all meet up somewhere, but make sure you are all separately mobile.
An easy way to break in talking to women is just to say hi to them as you pass. Most people have this fear that the other person is going to lash out at them and make them feel like crap. While I can't say it will never happen....it would be extremely rare and a chick not many would want to be with no matter how hot.
