Its summer time... I've been burned out by school. By the time I finish work, exercise and hanging out with friends, I just want to crawl up with a good sci/fi book. Things I've tried and liked:

Piers Anthony's numerous series
JRR Tolkien's Rings (LOVE THIS)
Mercedes Lackey
Robert Jordan "Wheel of Time" series
Heilen Swords Series
Brooks's Knight of the Word and Shananara series
Dragonriders of Pern series

Got any other recommendations?

You said Sci/Fi but listed mainly fanasty. If you want Sci/Fi read Larry Niven's work, Ringworld is execellent, I also liked

Integral Trees
Smoke Ring
Mote in Gods Eye

You should also read some Heinlien, Stranger in a Strange Land is a classic.
and Azimov, The I Robot books are easy reads. These are now old enough that some of what they considered science fiction is now existant. ie computers

You've read some of the good ones. Try these if you can find them.

Book of Swords Fred Saberhagen - big series, starts with this one
Guardians of the Flame Joel Rosenberg - has 4 or 5 books in the series
The Belgariad and The Malloreon 2 series by David Eddings, start with the belgariad.

you HAVE TO READ Philip K. Dick books, it's a neccesity. I'm not joking around here. A scanner darkly, Ubik, the 3 stigmata of palmer edridtch, etc... YOU HAVE TO. Also i'm reading the Hyperion series right now by Dan Simmons, IT KICKS ASS. I usually don't read sci-fi but philip k. dick and dan simmons kick ass. Seriously read philip k. dick. SERIOUSLY.

If you liked the above series, another excellent series in the same genre is:

Memory, Sorrow & Thorn by Tad Williams! Great reading!

Book one of four is The Dragonbone Chair.

Although it's shorter, I would put this series right up with Jordan's "Wheel of Time," and Eddings "Belgariad/Mallorean".

Mostly anything by Asimov (a true scientist), especially his Robot stories.
Most of what Heinlien wrote was good.
Battlefield Earth by L. Ron Hubbard (the movie was suck... the book was GREAT)
World of Tiers series by Philip Jose Farmer - Very Good

Damn, the DragonRiders of Pern was the best series ever. Have you tried any of Anne MacCaffrey's (messed up on her last name?) other books? If not, and you don't have anywhere else to turn to, check them out. Although none of the other series were as good as the dragonriders, they were definitely worth reading.

Alright, Pet peve of mine:

LOTR is not SCI/FI!
it is fantasy

On to the topic.

You might want to check out Ray Bradbury. Farenheit 451 and The Illustrated Man were both great reads.

As for Fantasy.

Check out The Wheel of Time series by Robert Jordan.

Some of the best fantasy books I ever read were written by Guy Gavriel Kaye. The series is called The Fionavar Tapestry. There are three books: The Summer Tree, The Wandering Fire, and the Darkest Road.

Memory, Sorrow & Thorn by Tad Williams! Great reading!

Book one of four is The Dragonbone Chair.

Was there another one? I was under the impression that there were only three - Dragonbone Chair, Stone of Farewell, and To Green Angel Tower.
