For eating with crackers and grapes, probably brie.
Just slicing up and eating plain, probably a good aged cheddar or provolone.
A nice slab of "stinky" goat cheese or gorgonzola over steak...

Also, goat isn't a cheese. That's like saying "cow", when there are hundreds of different kinds of cheese made from cows milk. There are many different kinds of goat cheese that are all completely different.
