That's a tough one. There are so many good cheeses for different occasions. I don't think I can pick just one.

For eating with crackers and grapes, probably brie.

Just slicing up and eating plain, probably a good aged cheddar or provolone.

A nice slab of "stinky" goat cheese or gorgonzola over steak...

Yep, I can't pick just one. Cheese is just about the best thing mankind has ever made.

Also, goat isn't a cheese. That's like saying "cow", when there are hundreds of different kinds of cheese made from cows milk. There are many different kinds of goat cheese that are all completely different.

Lol i see your point, i can only think of one goat cheese anyway at least at your average supermarket.

Yeah. The average supermarket goat cheese tastes pretty similar to feta. Just a bit creamier.

I like a lot of cheeses, but my favorite is a Tillamook medium cheddar. I know its pedestrian but it goes great melted on just about anything.
