That's about as stupid as someone else saying "cow." What type of goat cheese?

edit: I skimmed through the thread & see someone made the exact same point.

For me, if my "favorite" is defined by which cheese I eat the most - low moisture, part skim mozzarella. (Pizza!!)

My favorite easy to get cheese to eat alone or with crackers is a 5 year aged cheddar. Otherwise, most of my favorites are various artisan cheeses that you can't get at stores.

I'm on a huge kick right now of applewood cold smoked provolone. It is simply amazing on almost anything. Makes a really meaty tasting grilled cheese. Great with casseroles. Or just eating it plain from the fridge.

Otherwise I'm also a big queso blanco/queso fresco fan. Any cheese that I can literally put on a hot grill and/or griddle is major win for me. Or even just being traditional and grating it fresh onto tacos.

No, not really. Maybe he likes a lot of cheeses from goats milk? In many contexts people have classified cheese that originates from a goat - "goat cheese".

That's a silly argument. You wouldn't be able to tell what many cheeses were made from on taste alone.

I've rethought my favorite:

Gorgonzola when it's applied to a perfect medium rare filet mignon.

I was about to retort, but then I figured we would be having an argument over cheese

Cheddar Old/Aged/Sharp. Sure, it's pedestrian, but it's a cheese I could eat daily and never tire of. Can't really say that about other Cheeses.

Casu Marzu

aka, "Italian maggot cheese."

yum!

Double Yum!
Several food safety issues have been raised in relation to Casu marzu, including anecdotal reports of allergic reactions and the danger of consuming cheese that has advanced to a toxic state. In addition, there is some risk of enteric myiasis, or intestinal larval infection. Symptoms include nausea, vomiting, abdominal pain, and bloody diarrhea.[9] Piophila casei larvae are very resistant to human stomach acid and can pass through the stomach alive, taking up residency for some period of time in the intestines and causing stomach lesions and other gastrointestinal problems.[10][11] The larvae have powerful mouthhooks which can lacerate stomach linings or intestinal walls as the maggots attempt to bore through internal organs.

yep. as bad as saying "Swiss cheese." ...especially when you consider the majority of what Americans think of when they consider swiss cheese is anything but swiss: A similar, yet terrible approximation of one type of cheese originating from Switzerland, i.e. Ementhalier, which isn't even that interesting of a swiss cheese.

Yah yah. But seriously, like how some hot sauce comes with star ratings, packages of cheese should come with gas potential ratings.

I like a lot of cheeses in a lot of different scenarios, but Sharp Cheddar is what I eat when I just want to eat cheese - I can eat it all by itself. Yum.

I have been really into pepper cheddar lately, it is much more flavorful then pepper jack. I can't narrow down just one favorite cheese though. I love cheese.

I just came up with this, it is awesome.. I'm sure someone invented it be fore me, but I didn't find it anywhere.

You take a 1inch thick pad of sharp cheddar and add it to a medium anodized aluminum pan and allow it to fry; as it fries pull up the bits that get stuck to the bottom, they will become a sheet of cooked cheese. Keep doing this until the entire pad is melted.

What you have in the end is very similar to the stuff at the bottom of a fondu pot, except crispy as can be.

and Gouda is my favorite cheese.
