Can't give you anything useful, but perhaps this will serve as a bump. I have a 1.8 GHz Core 2 Duo and I've heard (variously) that it can only take 2GB or 3GB (4 GB installed, 3 recognized). That being said, it was standard laptop RAM.....
I'm guessing it's the 2009 model. You can use any DDR3-1066 SODIMM chips in it.
Assuming it's the same as my Macbook, it will have two RAM slots with 1gb sticks in each. Get a 2x2gb kit and you're good. You probably don't need any more than 4gb. That's plenty for most people these days.

GSkill only lists 3 retailers in North America and Newegg is the cheapest of them and as far as I can see the only one with FA model DDR3 so-dimms. Kind of like deal or no deal I guess.
Pro Tip: Note the disclaimer about installing 8GB of ram in your mini you might need to update the EFI firmware to 1.2 Only buy ram here if you want to make sure it will work right the first time, it is kinda pricey.
I like running a Windows VM in VMware Fusion so 2GB was definitely not enough for me. I went with 4GB stick for a total of 5GB and both Mac OS X and my Windows XP VM run extremely smoothly. I figure I can swap out the remaining 1GB stick for a 4GB when the prices eventually fall.
Its listed under Mac memory not in the regular memory section is probably why you did not see it.
$240 for 2 x 4gb of Mac spec memory does not sound bad to me it would cost you $500 from Apple for 8gb and you can't sell the old for a small bit of money. If cost is a factor GSkill 2 x 2gb is only $100 and probably fine for most users and twice what you already have.
