It seems the meat of this lawsuit is indeed against the Giants.
The generic claim Section 1981 was violated will probably go nowhere as the Supreme Court recently ruled that the "but for" standard must apply. The Giants' defense is probably the same as I cooked up. Daniel Jones has been a struggling QB with a particular skillset. He is mobile but has yet to develop in the passing game. Brian Daboll, has coached Josh Allen up with tremendous progress year-to-year from shaky beginnings to a high-level QB who played against the Kansas City Chiefs to a tight finish, throwing for 4 TDs to a fourth string receiver.

So, aside from bad PR, the Broncos and Dolphins are in the legal clear. The allegations against them are more for manipulating the commoner via the press than any substantial legal argument.
Since the NY/NJ law violation would only apply to teams in NY/NJ, it's clear which team is being targeted. The federal court may dismiss the case entirely for failing to meet the "but-for" standard need for section 1981 cases to go through and lacking jurisdiction over the misconduct of a single franchise in the Giants.
However, this whole thing seems just a little suspect...
Mara is one of the godfathers of the NFL. Crossing him is a death's wish. They're tight with the Rooney's too, who have been hailed as progressive for the Rooney Rule. Why the hell were they were loose-tongued with Bill Belichick. And how the hell tightwad Belichick sent a text to the "wrong" Brian. So, it would be the 25th in which he'd have to go hunting for not one, but two prominent lawyers in NYC. The law firms do not seem particularly large, and the dates they were retained are unknown. In under a week, they were able to hammer out a 58 page legal suit.
This suit sure could be just a ploy by the Giants, Belichick, and Flores to simply make news to drown out the Washington scandal.
In recent years, there's been a precedent for the very best young QBs to get their extension after 3 years of starting. Exactly, there's no hit to his perceived value. Almost no NFL teams ever draft and develop a competent starter only to let him walk.
