the wife made this a while back... it was just regular cornbread batter.

Then we each put a couple of cornbread waffles in a big bowl & smothered them with chili & cheese

You might be overmixing them. Mix too long and you kill their ability to rise.

Basically the fluffyness you're referring to comes down to two things: baking soda and eggs. If you're not using baking soda, try it. If you're using eggs, try using egg whites instead.

That all being said, I tend to enjoy two very different pancake recipes:

For me its authentic 100% New England or Canadian maple syrup and not too much butter. On waffles or pancakes. That's a piece of heaven for me.

Just buy a box of Bisquick (I like the Heart Smart variety) and follow the recipe. Once you see the consistency of that, when you start making pancakes from scratch you will have something to reference for batter consistency.

I still use Bisquick more times than not. It makes good pancakes, but making the same batter from scratch is cheaper.

Have you had those yogurt smoothies? Maybe a touch thicker than that. I usually let it sit for a few minutes and it will thicken.

I honestly cheat with my batter. I just get the box of bisquick and follow the "ultimate" recipe...

Yep. Using a big measuring bowl with a spout is the way to go. I use one of these so I can mix everything up and not have to worry about getting batter / powder all over the place:

Just add more mix. Consistency is something you have to practice at too watery and they don't rise, too dry and they become like a cake.

These are not boxed but its super easy to make. I use butter milk instead of the whole milk but either works fine. I do add closer to 1 cup of milk/butter milk.

I actually like all three pretty much equally. I usually make pancakes because they are so easy, but I will eat any of the three and be happy about it.
