Please recommend some slightly fancy recipes for:
  • Fish or Chicken
    • and
  • Pasta or Rice
It doesn't have to be fancy, but it has to seem fancy.

Must be easy to cook for a novice (e.g. not overly complicated but long duration is A-okay and may be a plus).

I can't make a call-out thread, but we all know who my main target is for this request.

Have your hot dog with ketchup on a croissant instead of a regular bun. Instant class.


Try Chicken Francese with Fettucini Alfredo as a side. Pretty easy, seems upscale, delicious.

A simply baked salmon with good presentation can always come out looking classy. With a good, simple glaze you can bring it up to a restaurant level main. Key is making sure you bake it well, or if you have the resources - cedar plank grill it.

Chicken is a little harder to make classy, but again it's mostly in the sauce. To make chicken on it's own classy, you can do something like stuff it with cheese and herbs (ala cordon bleu).

I'd just do a search for some salmon recipes (if you like salmon) and find one that sounds interesting.

That looks good, and wouldn't be too polarizing for taste. The only concern I'd have is with the strong taste of parmesan washing out the salmon, but that may not be a bad thing depending on the taste of the people eating it.

This would be one I would enjoy. Sub out the avocado topping for a mango salsa if you want something simpler to prepare:

Salmon does well with sweetness and with spicyness - add in some acidity through fruit or other method to keep it light.

That's a valid concern. I do a different parmesan/herb crust on fish and it's delicious, but balance is something to consider. You have to experiment a little to find the right amount of parmesan to use to get the flavor you want. Too much and all you taste is parmesan, too little and you might as well not have the crust at all. Do it for yourself once or twice before serving it to guests.

I make mine more like a dumpling though, dropping a teaspoon of dough into the water.

Here is a simple way to make a dish seem fancy without a lot of work or complication. It's good with leftover cooked beef or chicken. Of course can use uncooked sliced meat, in which case you have to cook it earlier with the veggies.

Start by cooking some rice and let it rest in the pot or dish. I prefer brown rice because it holds up better., But whatever floats your boat. Cook some of your favorite veggies in a skillet or a wok with olive oil. I like to include onions and garlic to give the flavor a boast. If you cook the veggies at high temperatures, substitute another oil like canola or sunflower oil. When you are close to fully cooking the veggies, add in the cooked rice. Then add your favorite sauce. Soy sauce or teriyaki sauce are two of my favorites. Add salt and pepper to taste, though I may prefer to skip them, depending on the sauce. Then add in the leftover sliced meat. You don't want to heat the leftover meat very long, or it will quickly dry out. Just keep it in the skillet long enough to heat it up. Then you are done.

If you are adventurous try fresh salmon. But keep in mind salmon will cook very quickly.

Batali's Chicken Marsala recipe is super easy and very tasteful. I find it doesn't make quite enough sauce so just double those ingredients.
