Pork belly at Costco

I guess I missed the memo that Costco is now carrying big slabs of pork belly. How come no one here mentioned this? Now I need to figure out how to cook this awesome piece of meat.:wub:

sous vide and then crisp would be best. You could also get into curing your own bacon, and braising it would be good. Dont eat too much

Comments like that you clearly don't belong here.

A simple beer braise is a great way to cook pork belly, it's almost foolproof. What is Costco charging for the belly? I might need to take a trip.

I think I paid $2.85/ lb today. While it's not a super price, it's cheaper than Asian stores like H-mart and the belly at Costco is higher quality with less fat.

I thought about sous vide and then pan fried crisp method. I'm also thinking about smoking then pan frying the fat cap crisp. The easiest method would be slicing it thin and cooking as samgyeopsal. So many ways to enjoy this fine cut of pork.

if you buy the cryovac its like $1.99 per pound. You might have to ask for it since not all places have it uncut in the case. Also, They have only started carrying it about a month ago.

I bought the cryovac for $2.85 per pound. The smaller cut packaged version was around $3.35 per pound. I don't mind the $2.85 as the quality of the pork belly was phenomenal. There was barely any fat on the meat.

there should be a decent amount of fat for good pork belly. even better would be skin on.

Pork Belly is the cut where we get bacon from. Only Asians decide it would be better to not smoke it then fry it in strips.

In the United States, bacon is most often made from pork bellies. Uncured whole pork belly is a popular dish as well.

They are the same cut. The belly of the pig is where bacon comes from. In the US, that cut is almost exclusively used for bacon outside of the Asian community.

Bacon is pork belly, in the sense that a Mazda is a car. Pork belly is not always bacon, but bacon is always pork belly. Turkey bacon isn't bacon.

And, I was referring to them not frying the strips as you would bacon. =)
