To put it a different way, an open port isn't exactly like an open door - you can't just walk through it and do whatever you like. For every open port, there's a program that listens on it and decides how to handle the communication. Your bittorrent client is listening on those ports, so security problems only arise if that program can somehow be fooled into doing something it shouldn't.
