Screw prime meat. I get a side of beef that is grass feed from my local farmer for $3.50/lb.

thats the hanging weight price, what was the delivery weight?

I almost got ripped off last year by buying a 1/4. hanging weight was like 207 pounds, when i went to pick it up it was just in 2 boxes. took it home and weighed each piece and i had 103 pounds. so it was 50% loss from hanging which made my $3.35 per pound meat to almost 7.00 a pound. I called the butcher up and said WTF. he bought it back from me that afternoon.

He did say he would have to raise his prices next year because of fuel and seed costs this year.

I do not know. I would have to add up all the packages as they have the weight printed on them.....

The side of beef was 6 boxes. It took two 100 quart marine coolers to take home the entire side. One cooler was mine.

I have been buying "beef sides" for a long time which is 1/8 a cow. My half of the side was a better breakdown of the meat and appeared to be more in general but I have done nothing scientific to determine it. It also allowed me to get it cut like I want. With the "beef sides" I have no choice in how it is cut.

The farmer I go to is a smaller farm where all his business comes from word of mouth. So he could be ripping people off but it would only hurt his business in the long run.

My biggest issue is the amount of ground beef you end up with. I like ground beef as much as the next guy but it far outlasts the other parts of the side.

hanging weight and deliver weight are two entirely different things. I guarantee you paid more than $3.08 per pound for your meat, why? because you did not get the full weight of what it was when it was weighed on the hook. you have loss, like bones and the fat the butcher trims off, and that can be a significant change in weight. like 25% at the most.

humm ive always known a side to be half a cow. im not sure what 1/8th is.

if he puts the weight on the paper thats good but i have never seen a butcher do that.

3 box per quarter is about right, and is why i was puzzled as to why i only had 2 boxes when i got my 1/4. i asked him if that was all of it and he said yes.... so that is what prompted me for the first time ever to weigh each piece and discovered there was a 50% loss and i just shelled out 700 bucks for a little over 100 pounds of meat.

I never said it was the same that’s why I listed it as hanging weight..... I went and looked at the paper work and yes there was about 23% loss from hanging to box and it calculated out to $3.99 a lb. With the added bonus of bones, heart, and suit that were not weighed I think that’s a great deal.

Edit:
The place that butchers for the farmer I know gives a printout of all cuts received and total weight of the meat after butchering because they sell mixed quarters…. Meaning they cut the half of the beef and split it in two so you end up with some of all the cuts not just what you would get with a front or back.

I agree with this, I was about to post the same.

It's going to be really hard to save an extreme ton over most big box companies meat departments.

You will get a healthier fed meat AT TIMES. There are a lot of farmers advertising organic meats when they are guilting of the antibiotics and steroids themselves. Meat packers are regulated heavily, small farms not so much.

You should try to find it in bulk pack, say alternator sized. You would probably get it cheaper.

wish i was in your shoes. i really would like some good meat to grill this summer. but after that last butcher trying to rip me off im leery of trying anybody new.

I've been wanting to do this bulk beef thing, but first I gotta invest in a deep freezer (which I really need anyway for all the other food related stuff we do). One thing that's held me up, though, is getting a nice grass fed quality cow like that worth it when you end up freezing the whole thing? Is there anything extra you do to minimize freezer damage? Obviously I see the cost savings, but we don't eat much beef anyway so it's not that big a deal to pay through the nose for it. Though, we'd eat a bit more if it came at a reasonable qualityrice. I get good choice from a local butcher--I'd rather forego beef altogether when presented with shitty grocery store cuts.

I always go to the store during the middle of the week when they start marking down the price of all the meat that is about to expire. I can usually get prime strip, filets, and ribeyes for the price of choice. You just have to use it within a day or two or else freeze it.
