I understand your complaint though. I'm not a big fan of prosciutto either, at least for sandwiches. I'd rather have some Boar's Head tavern ham on a sandwich. Love prosciutto wrapped around an asparagus spear though. Its fattiness and saltiness complement asparagus well.
Just had this tonight! My friends and I are watching both Godfather 1 & 2 tonight, so I suggested an Italian dinner during the break. I prepared a traditional antipasto with capicola, salami, provolone, peppercini's, olives and a vinegrette. Then, the asparagus wrapped in proscuitto, caprese with a spaghetti and meatball entree.
watching Godfather 2 right now...some gelato and ice cream to come.
