whats the diff between Prosciutto and ham?

Proscuitto *is* ham

but its salted and cured. not like a salted, cured american ham.... at first glance this is a good read on it

i love proscuitto, though im from the south and have never had anything other than packages stuff :-/

kinda makin me want some chicken cordon bleu, as i use prosciutto when i make it.

I like Prosciutto but I never realized its not cooked? Its just salted and cured? Still tastes good though. (My fav sandwich from the local deli near work is Prosciutto with grilled chicken, broccolli rabe and mozzorella. So freaking good.

It comes uncooked. The high salt content kills germs. I don't like cooked prosciutto that much. Find it much too dry.

Also fans of prosciutto and jamon iberico should try all the cured hams of the world such as French Bayonne ham, Chinese Yunnan/Jinhua ham, Virginia country ham.

Would like to try this sometimes. I have heard a lot about it. Its interesting that there is a thriving Jewish food culture in both Montreal and New York. Both places known for their Jewish delis and bagels/beales.
It is hard to get outside of Montreal. There is a lot of fake stuff out there. Montreal Smoked meat is not like regular pastrami, its hard to describe it. Apparently Costco in Canada carries Dunns Montreal Smoked Meat.

I once ate a whole pound of it. OMG I was in heaven.

Poutine is overrated. Cheese curds, gravy and french fries doesn't do much for me.

Getting a smoked meat sandwich here is very expensive.

I live in Texas so can only see the pictures. I like the combo of gravy and french fries but don't know exactly what cheese curds taste like.

Where I live, they smoked meat looks more like this

cheese curds are what cheese is actually made from. Its whats left over after the whey is removed.

Sort of tastes like mild cheddar. They make good snacks though.

Yes I'm a foodie of sorts. I am familiar with panmeal bacon. I have probably eaten more cured meat than is good for me unfortunately or fortunately.

I often consider doing my own charcuterie but apartment living and the Texas heat makes this nigh impossible.

this is one of my favourite things to make: Smoked shoulder ham

Comes from Quebec.

How do you cook that ? put in oven? or just slice and eat?
its only partially cooked.

and its rather salty. The best way is to simmer it for a couple hours, depending on size. Then take it out and put it in the oven in a roasting pan with lid on for about 1 1/2 hours or so at 325F.

Comes out fantastic and makes the whole house smell of smoked ham. There is a large bone in there so the meat is limited. Its great for slicing and serving hot or making ham sandwiches when cold.

I like it hot with mashed potatoes or a nice flavourful rice.

My exGF really liked it when I cooked this dish. She still bugs me to invite her over when I make it.
