I prefer Wusthof-Trident. Henckel makes some quality knives too - you should try them out at a store to see what you like better. I'd avoid Kyocera - they're good for chopping if that's all you do, but too brittle for general use.

If you've never had a high quality forged blade, try a decent pressed blade first It might do everything you want it to, and you would be able to save a lot of money.

Wusthof is awesome. Stay away from their Silverpoint line, however, since those are mass produced pieces of crap. Their Classic line, however, is amazing. I love my set and wouldn't part with it for the world.

How are brittle knives good for chopping?

I got a set of Sabatier Grand Chef (which is their forged line) from amazon for about $200

I love them, but i moved from a cheapo pressed set...good knives though, ill have them for a while

here they are

270 now; may be able to find it elsewhere cheaper, but good knives definitely.

Grohmann knives. Their forged line Absolutely kick-a$$ for the price. Far better than any Wusthoff or Henkels I've tried.
Regardless, if you want quality for any brand, make sure you get forged ones. Most knive makers make "econo" versions now that are just stamped.

Henckels are not what they used to be. Most of them are now made in Spain and somewhere in the former Eastern Bloc. They are not as durable as they used to be. My parents are still using the same set they have had for more than 20 years. The ones I got as housewarming gift didn't last more than a year. Global is new rage among home chefs. Most surgeons I know absolutely love them. They have a surgical feel to it that no other knives possess. They are quite heavy and the grips aren't quite as comfortable as Henckels. My current love is Wusthoff. These tend to stain quite easily. Wash them right away and they should keep you happy for a while.

I've got a Henckel's set that is incredible. My uncle, who is a professional chef, bought them for me for my wedding. They are forged, full tang, wood handle, and high carbon steel. All of those features are what most chefs look for in a good knife or knife set.

Actually, my sister-in-law has these, and they really weren't too bad. They were nice to use, but I'm not sure how long they had them when I used them.

I bought a set from Sam's Club. Don't know the brand, but I got the whole shebang for < $30

Came with 20+ knives. Very lightweight and cheap feeling ... but they've been doing a fantastic job. Can't complain for the price.

A really nice set of knives will last you a lifetime and more. Don't skimp. They make cooking a joy instead of a chore.

Make sure you try out the knives first, feel the weight. It should be balanced and heavy at the same time.

Ginsu==Miracle Blade

Same company, but they stopped selling under an international name because people prefer to buy American made products. Their sales went up like crazy when they changed over.

I have them. I cut a quarter in half with one of the steak knives. I forgot which one I cut it with, but if you look at all of the steak knives together, you can't tell either because there's absolutely no damage to the blade. I love these things. They cut anything.
