Question about cooking salmon with my BBQ

Anyone good with BBQ cooking can tell me thE right way to cook salmon on BBQ?Do i put the salmon directly on the grill?? Do i put the salmon in aluminium paper?? Do i cook low or high???

Are you cooking the whole fish or filets/steaks?

For filets/steaks, wash it first, then brush the grill wil cooking oil. You can also apply a very thin layer of mayo on the fish to keep it from sticking. Cook on high heat for about 2 mins/side for 3/4" filets, 3 mins for thicker 1.5" steaks.

Fresh salmon, high heat, season, brush generously with oil (fish and grill). Sear for about a minute on each side.

Depends on what kind of flavor you want.

You can kinda poach it if you put it in a foil packet (with some butter, lemon, dill, etc.)

Generally though, I just leave the skin on and put it over indirect heat (not over the coals/burners). Season however you like it, then point the thick end of the filet towards the active burner, and then slap on the lid. Cook until it firms up and flakes when you insert a fork (about 130 degrees, if you have a probe). Let it rest for ~5 minutes before serving.

Edit: Oh, and don't forget to remove the skin before serving

The traditional way to cook salmon on a BBQ is to put it a fillet skin side down on a cedar plank and then place the cedar plank on the grill and cook it over moderate heat for about 10 - 15 min.

Depending on how high a heat your BBQ gives off, 1 min/side might be enough. It also depends on how "rare" you are willing to eat your salmon. Slightly raw salmon has much better flavor than slightly overcooked salmon. If you're cooking filets, you want to watch the sides at the thickest part of the filet. When the entire side goes from reddish to a light pink, you're good (assuming individual filets, not the whole side of salmon. I recomment that if you have a whole side of salmon, you cut it into 4" strips.

Do yourself a favor and buy Reynolds Release Grill sheets. They're thick aluminum foil sheets with holes in them, that are non-stick, that you place on your grill to cook on.

If your grill is clean and you put oil on it, the Salmon won't stick. Foil sheets just make it take longer to cook and dry the fish out.

Soak the plank submerged in water for an hour prior to this or you'll have cedar/salmon flambeau.

How much do those cedar planks go for? Do you just go to a hardware store to get that sort of thing or what?

I've been thinking about doing salmon that way for quite some time, but never really knew anything about it.

Useful thread actually...I'm grilling fish tonight, so the oil/mayo comments are definately helpful!

You can usually find them in any BBQ section of any store. Saw some at Target the other day. I think it was $5.00 for 4 planks. They are 1 time use but it is tasty.

Although you say your cooking steaks, if you want to try filet, try it with the skin still on. Well oil the meat side and apply seasoning of choice, then grill skin side down with the grill closed until the meat is cooked through and the skin is burnt.

Salmon fillet: rub a little olive oil on the fillet, some kosher salt and pepper. Lay on an oiled grill skin down on lowest heat setting for about 15 min (until it's done). Do Not Overcook!

Here is a good Salmon recipe that I make:

Grilled Salmon on Cedar Plank
Ingredients:
? 2 tbsp Soy Sauce
? 2 tbsp Olive Oil
? 1 tbsp Honey
? 1 tbsp minced garlic
? 1 salmon (2lb or so)
? 1 cedar plank

Directions:
Soak cedar plank in water for 1 hour. Mix ingredients. Marinate with salmon for about 20-30 minutes. Place on cedar plank and then cook on barbecue grill for about 30 minutes. About halfway through the cooking process, spread some more of the marinade on top of the salmon. During the grilling, check every few minutes also to make sure the cedar plank does not catch on fire. If it does, spray with water to lower flame.
