Ranges - Gas vs Induction

I've always preferred gas ranges. Now I see induction ranges. I like the idea from a safety and efficiency standpoint, but I have a feeling cleaning the glass (had an electric under glass for a short time) and the noise of induction would piss me off.
What say the cooks of ATOT?

If the choices were otherwise equal, I wouldn't consider anything but gas.

I'd be curious to try induction if I got a new stove as it's probably super efficient given the energy is going directly into the pot. My current is just normal resistive electric. Gas probably does have better performance as cooking with fire is always better, but electric is greener and don't have to run a gas line.

If I could, I'd probably go with the induction cooktop. I've heard they heat up much faster than gas, they have great temperature control, and you don't have to worry about the surface staying hot (unlike the typical resistive electric stoves)

I've cooked on gas ranges before, they're very nice for cooking meat. I've never used induction cookware.

induction requires that the cookware stay flat on the range. You will never be able to tip it to redirect the heat to a centralized point.

also induction does not work with all cookware, only those designed for it.

.. let's say, i'm unsure to the amount of calories it puts out. i know it can be hotter, but there's concers of manufacturers as to how quickly your breaker will trip, and likely also to how electricity costs can be seen as a negative. Which leads me to believe that, while they can be hotter, they are probably built not to be.

i dont know if gas costs more than electricity around your parts. Here, it's cheaper.

finally, the amount of calories it puts out is less. I dont have a number, but, as an italian, just observing how much longer it takes to boil a huge-ass pot of cold water, every day. (making pasta, yo)
Are you sure about that?
Here’s a breakdown of the results. It took a little over 4 minutes to boil water on an induction cooktop. That was three minutes faster than on an electric coil (about 7 minutes), and four full minutes faster than on the gas range (about 8 minutes). Induction was the clear winner in our test kitchen.

I'm prejudice because I was raised on gas. From the youngest age I had it. I made it a requirement when I bought my home.

Induction is limited in its uses (cooking is one of them). Gas let's a man have all kinds of fun in the kitchen, like buring things they shouldn't be.

Or just live in any home in north Georgia built from 1995-2015. It'll be exchanging air from outside at more than twice what is recommended.

If you cook then gas, if you just want your cooker to look pretty then induction.

Make sure the oven is electric with a fan option.

Gas hands down. Gets hot faster, more even heat.


Negative on the "faster" ... as already posted in this thread its actually the complete opposite and IME the difference is big enough so you don't need a timer to tell. (I have an induction hotplate that will boil water faster than the gas range in my kitchen)

Induction in particular takes approx half the time of gas to boil water.

Gas has three primary advantages over electric ... first and foremost temp ADJUSTMENT is nearly instant which is ideal for cooking and second when the electricity is out you can still cook. Electric is also safer.

Not all glass-top ranges are induction.

My ex-wife has a glass-top that just heats up like a regular electric burner. I used to absolutely hate that crap thing. Super-fragile and a pain in the rear to clean, took FOREVER to heat up or adjust temps and would stay hot enough to burn you for 15-20 min after being shut off. The only "plus" was no crevices for gunk to build up in.

IMO unless its induction there is zero point to a glass-cooktop.

Had gas range for 25-30 yrs .. and moved to a house that had an electric cooktop that I pulled out and put in an induction cooktop. I was worried if I would like it as much as the gas range. It took a couple weeks to get used to the settings on the induction that were comparable to the output settings of the gas burner but once you learn that it is every bit as good as gas.
-when you change from output settings its instant .. just like turning a gas burner up/down
- lowest setting is even lower than the lowest simmer setting .. you can melt chocolate without double boiler
- highest "boost setting" will boil a large pot of water substantially faster than the 15k btu power burner I used to have on gas
- you can keep a stirring spoon/spatula on a paper towel next to the pot/pan your cooking with ... wont be a fire hazard like gas.. very easy to clean
cons:
may have to purchase some new cookware if your existing cookware isnt induction compatible

We've had two of the electric glass-top ranges. (No gas available in the last house, propane only available here) They work about as well as any other electric range...and as captante says, they can be a real PITA to clean....just the opposite of what you'd expect. True that there are no open "wells" where the element plugs in...which is better, but it's surprising how bad stuff "burns into" that glass top. Cleaning often requires careful application of a single-edge razor blade.
