Bacteria lives on the surface of the meat and is killed when the outside is seared. E. coli is a problem with ground beef because grinding mixes the surface throughout the meat.I dunno. I got this funny aversion to E.Coli or something I think. D:
I like steak rare. It should be seared on the outside and cooked through just enough to ensure it doesn't twitch when sliced.
