Rare, Medium or Well Done ????

If you go to great steak places and order it to the Chef's specifications, it is invariably rare.

You do realize that's not b/c of the chef right? That's b/c the guy who's cooking it, the guy from the Dominican, Ecuador, or Peru, doesn't want to waste any time with that meat on the roll-out grill when he can just walk it across the heat in two minutes and serve it and get the dupe off his board.

Dude, I've been around a long time, and I've had enough steaks over the years. If I have one, it better be black and crusty, or the mediocrity that is already steak will be just about unbearable.

Uggh, you might as well chew on a pine cone.

Everyone is entitled to eat their steak however they like but, a long career cooking all over the country has taught me that race and region play a big part in a diner's preference.

I'll even order my hamburgers medium to medium-rare if possible but I prefer burgers over steaks since I can easily get a great burger and not have to wait forever and to get a good steak is going to a longer wait plus much more expensive.

For steaks, medium-rare.

For ground beef, medium or medium-well.

Well done... I might as well be eating a hockey puck.

First of all, you fail at poll.

Somewhere between medium and medium-well for me. I voted medium. Any less than that and it just doesn't taste good to me.

Just finished medium rare filet Modeiga, yum. I usually spell it Modiga, but that's what they had on the menu.

The biggest problem is that when you order rare you usually get medium.

Most restaurants don't know the proper terminology.

It's true to the other side as well. I order medium well i get medium rare. I order well done I get medium. Almost have to order it charred just to make sure it's cooked through.
