Nothing that I know of yet, but Google is working on the equivalent of Chromecast for the car, but it's likely not an aftermarket thing. Apple has something similar with CarPlay, if I remember correctly. You can also do just display mirroring with Miracast, but I don't know how that would work with a touchscreen. It would be complicated to do it any other way.
I had a Raspberry Pi setup in my car with a screen, but I'm going to forgo that because I'm not satisfied with the screen I used (small 4" non-touchscreen). Instead I'm going to mount my VivoTab 8" tablet in my car. Perfect because it's relatively cheap ($250 when I bought it, though it dropped in price), has Bluetooth, and has GPS unlike most other 8" Windows tablets.
Windows 8.1's "modern" start is the perfect car OS UI, in my opinion. Easy to hit those large tiles. A lot of people use a dash mount for the Nexus 7, though, which is probably the best option if you are an Android user (plus apps like Torque or
Dash are pretty awesome if you have a Bluetooth OBDII reader).
Wireless touchscreen displays are the ideal solution, but for now I think just mounting a tablet and syncing what you need is the next best thing. All the current ways of mirroring that I know of don't seem to work great or are expensive. It's just cheaper and potentially simpler to use a tablet rather than connect your phone.
