Ripoffs at high end steak houses

Tenderloin aka filet mignon is not a particularly fatty at all. It is lined with fat on the exterior surface of the muscle but not much at all internally.

The reason why FM is so tender is because it is a muscle that doesn't see much work in a cow. Because it is not used much, it stays tender.

Interesting, I need to eat more filet now!

You made a good point. Men like to thing they're the alpha in meat cooking, sex, and they all thing they'd be great in a fight. It's a testosterone thing I guess.

people bash Alton brown often. He never claimed to be a elite level chief And nobody has claimed they are masters at cooking from his shows.

What he does is something i have never seen. It teaches the basics and WHY you do things how they are done.

When i see people bash him on that it gives off the impression of those bashing him are snobs.


Is altons way of doing a steak the best? no. but it is rather good to do in the winter when i can't (well i can i just don't want to go into the cold) to grill?

Is Ramsey's way of doing a steak wrong too since he didn't use a very hot broiler?


I have had $100 steaks. they were amazing. was it $80 better then what ic an do on my grill? not really.

though i think i lucked out with having a good butcher with local meat.

A lot of men believe they have uber steak making abilities, alto also believe they have uber love making skills too. Needless to say men overestimate their abilities when it comes to just about everything. Not a man in this thread can make a steak as good as Del Frisco's, they can think all they want that their their steak is every bit as good. But it's not. It could be somewhat close, and to them it might actually be exactly the same. But it will be inferior.

The easiest 2 types to spot are the one's that bring up Alton Browns method and tell me it rivals any 4 star steak house. And the other are the ones who bring up how they marinate their steak for hours in some uber home made sauce.

I like Alton Brown, but I'm not going to tell you that my steaks are as good as a 4-star steak house They're good enough for me though.

Alton Brown is humble, and I don't think any rational person is following his tips and ideas and proclaiming they are > $50,000 steaks or whatever. Part of the appeal is how he applies science and teaching to his shows and books. He's not arrogant, and he's relatable because his stuff is almost always incredibly accessible, affordable, and practical.

And for me... Its like wine.
I have had GREAT 60 dollar a bottle wine (Speaking to eating out). And I have had 400 dollar a bottle wine. 400 was tasty... 6.5 times more so? NOPE.
I CANT JUSTIFY 100 bucks a glass.... NO MORE THAN I CAN JUSTIFY 120 for a SMALL Kobe Steak.

I can say been there, done that. Riverside Cafe in Brooklyn NY. I was treated to a glass of wine $400... I had the waiter pour it into 4 seperate glasses after a metered pour. So the 4 of us could sample it.

It was good... 400 a GLASS good? Again, NOPE.

I'd probably really enjoy one of your steaks, the problem with my friends is they hype up their steaks to where it's always going to let someone down. If someone says "my steak's pretty good" I'll be able to enjoy it more-so than a dude who believes he's the master chef of the entire US. Good is good, and honest is always good.

lower-priced alternatives, like chicken and ground beef, have also skyrocketed. so have fish, pork and lamb, although lamb has pretty much disappeared from supermarkets due to low demand and stores are pushing fish in the same direction. in a supermarket's perfect world, they sell only chicken scraps that are 51% pink slime.

QFT, chicken cutlets were $5.87/lb vs boneless breasts for $2.99/lb.

Fish is a better option bang for buck, we had come last night. I live in S. Florida so YMMV regionally.

I'm rarely concerned with prices at high end steak houses, as I'm usually charging the steak dinner, complete with sides and a couple glasses of wine to the company expense account. Bring on that $45 Porterhouse!

I ate at Benjamin's in NYc on 41st last night. Damn fine steak. Excellent service.

A $45 porterhouse is not really high end.

I can get boneless breasts for $2.25 / lb here.

It depends on the meat quality. If I want to go to Little Mexico Grocery stores, I can get close to $2 on chicken breast. The chicken usually sucks.

They do have good pork usually and some other ethnic things we like.

FWIW, my friend went to the same motorcycle school as Alton in Atlanta and said he was a super nice guy (this was before he became famous as he is now and when Good Eats was first starting out).

Personally not a big fan of tenderloin.

You know, I wouldn't say it's my favorite. It's nice as a treat now and then with some shrimp or lobster. My pecking order pretty much goes: porterhouse, ribeye, strip.

Our fish options are surprisingly weak for the most part. Forget about big stores like Publix carrying anything other than tilapia/salmon (I mean, it's not like we have a local fish supply, right?).

I've been in some of the small 'seafood' shops in the Lauderdale area, and walked out when I saw dolphin (which was probably caught in Central America) for about $25/lb.

About the only place I'll pick up fish these days is Doris Italian Market. They usually have something like yellowtail, dolphin, or kingfish that is caught locally.

It's semi pathetic that we don't have a better selection at most places.

It's not cost effective (from my viewpoint) to buy a side of a cow. Didn't we all see the "I Love Lucy" episode where Lucy buys an industrial freezer, and then a quarter of a cow?

not arguing with your general premise:
At least according to wiki (and a recent article in forbes) you're not getting Kobe beef at a restaurant either, at least not legit Kobe beef. They have developed Kobe-style beef in the US, but who knows how widespread that is and what the distribution channels are

Of course it is a rip-off, it is a luxury and as with most luxuries, the dollars will never add up for what you're getting.

The $200,000 watches you can buy are rip-offs too but it's not about bang for your buck with these kinds of items or services.
