Any cabling installation is not Category anything until the cable plant is certified and scanned to category specifications.
So yes, any "real" network installation every single link and channel is tested to whatever Category rating they installed. These test results are then stored. Most manufacuturers will warranty the cable plant for 10+ years, so if you ever have a problem they will fix it.
