What's wrong with road kill? Tastes delicious. Just a few steps to take before picking up road kill:
1. Is it fresh?
2. Are there ticks still crawling on it that are going to get in your car? (That's why you carry a big bag in your trunk.)
3. How much of the meat looks to be salvageable?
A decent sized deer hit by a car will often yield in the neighborhood of 50 pounds of good meat, well worth the effort. And, if you're lazy and carry one of those disposable box knives with you, you can slice down each side & across the neck, take the skin off the back, and remove the back straps. Tenderloins take a little more effort to get to. Usually one side or the other is bruised on the back straps, so just take the good side. If you're good, it'll take about 2-3 minutes to carve off about 15 pounds of awesomeness.
