Assuming you are comfortable with the fps shown in videos like the one here your parts look fine.

Prime day isn't always the best deal. When I did my ADL build I did it before prime by a week or two. I saved everything to a list at the price I paid for each part and then checked them during prime and maybe two parts were lower for maybe $10 difference.

I just did a build though with 7900x and prices have gone up. The CPU went up over $100 and has been coming back down. I went with an asr board that had been a return for $160 with the x670e chipset. The first thing you'll have to play with is which agesa version works properly. The board shipped with the oe deployment 1.0.0.3 and I tried the latest 1.0.0.7c and reboots would hang. Switched to 1.28 and that fixed the issue. Expect the unexpected and prep with different versions of the uefi and test things before closing things up expecting them to work.

Okay - I've been thrown for a loop w/ a tough decision because of a MicroCenter Bundle.

Here is the bundle. https://www.microcenter.com/product...ries-32gb-ddr5-6000-kit,-computer-build-combo

Price actually comes out CHEAPER w/ this bundle ($38 less than my other option and $192 less than what is shown below)- slightly better processor, I think probably a better mobo (?) but the memory is CL36 rather than CL30, so less good. My guess is that memory timing is very minor and assuming this is not a significantly worse mobo, I should go w/ the bundle (?)

I should go w/ the bundle (?)
You're in analysis paralysis. The bundle costs less than my CPU alone.

The only major piece to the puzzle I would consider changing is upping the PSU to 850W in case you change your mind again on something that needs more overhead. 850's go for $10 more even w/ a 10 year warranty.

Also, a RTX 4060 could be in the mix for a little le$$ though of course the argument will become 8GB of ram.

Looks like I should go w/ the bundle - better system, slightly, cheaper as well, and the memory latency is really quite negligible. Unless the MoBo is not great - seems maybe okay?

Only deficiency with the MOBO is the lesser specs than the 670's. Doesn't appear to be an issue with anything you've mentioned so far. The only real reason to upgrade the board is for more lanes / slots to use and/or Gen5 expansions.

I picked up one of these "used" for $160 - https://www.amazon.com/dp/B0BGPH2LQJ/ref=olp-opf-redir?aod=1&ie=UTF8&condition=ALL&th=1

But, I suppose the bundle is more appealing if you price things out separately.

The MSI motherboard only has 2 M.2 slots compared to 3 on the ASRock and one of the ASRock slots is a Gen5. Otherwise there are not many differences in the 2 boards (one is mATX, other is ATX if that matters to you. The ASRock boards seem to have the best boot times of the new AMD boards. But either one should work fine and the 7700x is better than the 7600X. The difference in memory shouldn't be that great. The speed is typically more important than CAS latency. You may be able to run the memory at a lower CAS if you are willing to spend some time trying out different settings.

I'd snatch that Microcenter combo if I lived near one. I'd take a 6700/50XT all day every day over a 4060 for gaming.
