I'd reluctantly vote mustard for sausage, hot dogs and such, but would miss ketchup on my eggs and hash browns.
We serve hot dogs (chips, no fries) at the snack shack I manage and some folks ask for mayo to go with their hot dog. I refuse to be any party to mayo on a hot dog so we don't stock that crap. Plus the mayo would go bad considering we only get a dozen or so requests a year, usually from the Canadians who come down on holiday.

Tabasco is best on fries, with malt vinegar a close second. I've never bought ketchup since I've been out on my own. Every once in a blue moon, I'll put ketchup on fries for something different, but that's because most places haven't acknowledged the magic of Tabasco, Of course, I'll also get ketchup on burgers when that's the way come. I don't care enough to get it removed, but I'll never use it at better burger places, where you tell them exactly what you want.Mustard can be easily replaced by horseradish sauce on meats, but you cannot replace ketchup on fries. Even malt vinegar doesn't cut it.
