Call it what you want - and I haven't brushed up on what the Atkins diet truly means in the end, but most people treat it exactly as such - as a diet.
And if you go off the diet (back to normal) - you will gain it all back if normal was a lot of carbs, lower caloric intake or not (unless quite restricted).
Paleo "encompasses" some of the Atkins idea, but it goes a hell of a lot further - stone age, to be precise.
Basically, we didn't harvest grains, consume grains on mass, raise cattle and drink their baby juice, etc etc. So, why should we eat that stuff today? Solution: don't eat that stuff today, eat more like the hunters and gatherers, try to incorporate what they did on a daily basis (with a modern twist)... and you'll likely reach a mighty fine health and fitness level.
Minimal sugars, even natural sugars, is a big part of Paleo. Even to the point of limiting fruit, and being mindful of fruit chosen. Paleo tends to be tied into Crossfit or other exercise routines, mainly to teach a mindfullness of what you eat and when you eat it, based around your activity level at any point in the day. Sugars are best before exercise. Grains are a big no-no, mainly because they are pointless and offer nothing worthwhile that can't be had elsewhere in a better all-around package. High-starch foods are also frowned upon.
I follow the idea, but not to the letter - I can't give up grains and all sugars, I love me some milk and butter, and I cannot stand most typical vegetables.
Cutting sugar alone helped shed some weight, but I'm not changing my lifestyle just to lose weight - I'm actually at a good weight for my height and frame. I would like to slowly both build more muscle and drop down below 10% bodyfat so I can see the abs I got to be rockin' at this point.
But I digress. You'll still disagree anyway - most who haven't arrived at this conclusion or actively deny the logic and science, are tough to convince. Some people just don't care one way or the other.
I just want to be able to run or engage in other strenuous activity when I'm 80+. Not mope around all diseased and/or frail.

You NEED Carbs. If you are low on carbs the symptoms lack of energy and depression. Your brain doesn't function properly. I'm sure that Ramsey's eggs taste very good, but it looks like way too much effort. It's scrambled eggs, not a gourmet meal.

I'm going to continue to cook tomatoes as a side though. Never thought to do it before this, even though it's common in Britain, and I lived there for 6 months. It does go well with eggs.
