Sim Racing Computer

Hello everyone. I am thinking of upgrading my 7+ year old computer (that I built with free/spare parts) and getting something modern. I want to do sim racing (iRacing/Assetto Corsa etc) and I'm probably going to have 3 monitors and possibly an Oculus Rift (not sure if this effects my hardware requirements tbh cause I've never used it). I have access to a free motherboard/CPU/GPU combo (Ivy Bridge i7 and nVidia Quadro K5000) and I'm wondering if that would be sufficient enough with 16GB RAM or if I'm totally off here. Any ideas?

Also looking for monitor suggestions (I'm not too picky with size/resolution as I've been on old hardware for what seems like forever)

1. What YOUR PC will be used for. That means what types of tasks you'll be performing.
Sim racing and video editing.

2. What YOUR budget is. A price range is acceptable as long as it's not more than a 20% spread
Honestly, the absolute cheapest sufficient is best. I don't even know where to start, but of course in the end, I'd rather not spend over 1000$.

3. What country YOU will be buying YOUR parts from.

4. IF you're buying parts OUTSIDE the US, please post a link to the vendor you'll be buying from.
We can't be expected to scour the internet on your behalf, chasing down deals in your specific country... Again, help us, help YOU.

5. IF YOU have a brand preference. That means, are you an Intel-Fanboy, AMD-Fanboy, ATI-Fanboy, nVidia-Fanboy, Seagate-Fanboy, WD-Fanboy, etc.
Don't care about brands.

6. If YOU intend on using any of YOUR current parts, and if so, what those parts are.
I plan on using a freebie CPU/Mobo and I have 16GB RAM.

7. IF YOU plan on overclocking or run the system at default speeds.
I can overclock.

8. What resolution, not monitor size, will you be using?
I plan on hooking this thing up to either 3 monitors or 1 big 50 inch TV.

9. WHEN do you plan to build it?
Note that it is usually not cost or time effective to choose your build more than a month before you actually plan to be using it.
Anytime between now and a few months (January)

10. Do you need to purchase any software to go with the system, such as Windows or Blu Ray playback software?
Windows.

From what I can tell your free hardware (equivalent to a GTX 780) would be just enough to run those games well. The parts are old but decent.

The Quadro is the most questionable part, particularly if you want to use the Rift. I could also see an argument for selling the Quadro to get a GTX 1060, but it's debatable whether that would be an improvement, unless you can invest extra money to get a better card.

What's your budget in this build? Where would you buy parts from? And other questions.

If you buy a Rift then at the minimum pick up a GTX 1070. I sim and own a cockpit. I used a GTX 1080 and GTX 1080Ti with good success.

Sounds like you are sitting on a couch to play your racing sims?

If you plan on sitting at a desk, (if your budget can handle it) I would get one high-quality monitor for the gaming, etc. 27", IPS if possible, and at least 1080P resolution, G-Sync, and fast refresh.
