You guys mostly play as mages or warriors? I remember in the other games the mage made the game kinda easy.
People who say that strategy guides are for cheaters in games like Skyrim must have a lot of free time on their hands. I picked it up, too, and haven't once used it for "cheating" on a mission. Instead, I find it FAR more helpful merely as an encyclopedia on the world: what spells exist in the game, which ingredients make which potions, etc.
I took yesterday off work to play it... it wasn't enough :'(

Thief for me. I love being super stealthy. 99% of my kills are one shot arrow-to-the-face sneak attacks.

I'm doing an Orc. Most of my perks so far have gone into double-handed weapons and smithing. Throughout my travels, my lock picking, heavy armor, and archery have been leveled up quite a bit.
Is it possible to make out every perk, granted one took the time to do it?
I'm not sure how many skill perks there are total, but you only get a perk every level, and afaik the level cap is 50 (based on the achievements anyway), so unless there is another way to get perks, you can't max them all.
Damn I wish you could, though.
I like to play what amounts to a Spellsword type character usually. I am usually only minimally stealthy with a minimal amount of archery in there (though it looks like archery is far better in Skyrim than previous Elder Scrolls games). My focus is mostly a combination of magic with perk points going to conjuration and destruction (though the dual casting of destruction is winning in Skyrim), and a one handed sword wielder. My most regular thing currently is a fire spell in the left hand with Dawnbringer in my right. I admit I do miss the ability to block. I also am a heavy armor person usually. I'm currently looking to increase my enchanting so I can end up with better armor enchantments.
50 is not the cap. It may be 100 but I have read it is really slow to level after hitting 50 with a couple people claiming to be around 67.
http://elderscrolls.wikia.com/wiki/PerksThere are 280 perks in Skyrim.

So, it would appear as though the PS3 version is broken.
Over the last couple days, I've been noticing more and more lag when doing nearly anything in game. It started out during heavy battles, but now, my game lags so badly when doing almost anything. Walking through towns, battles, ANYTHING. I would say the frame rate drops to somewhere in the 5-10 FPS range very frequently. And when using shouts or spells, it seriously freezes the game for maybe half a second or more.
I meant to Google it last night, but I forgot. Then I was reading Reddit earlier, and I can see I'm not the only one:

I thought the awful lag/low frame rate I was seeing was due to having a lot of saves, so I cleaned out all but 3 of my saves, and the trouble is still there. My save file is around 6 or 7mb right now, and I hear it gets worse as the save file gets larger. Some people with high level characters and large save files report that it gets exponentially worse as you go along.
I really, really hope there's a fix for this. There have been reports that it eventually becomes unplayable. And from what I've read, this isn't the first time Bethesda's PS3 games suffer this same issue. This definitely seems to be a widespread thing, and it would be awful if they didn't address it.

edit: Bethesda's PR has said a fix is coming. Hopefully it's coming quick.
So what's everybody working on for skills? Despite the fact that I'm playing as an Orc, I tend to use archery a good amount. It helps with dragons, and to get a first couple hits on powerful foes.
Last night I started working on increasing my smithing level. Did some mining to get some ore, and then hunted for a couple hours. Went to Riften, killed/looted every animal in sight, and then made an ass load of leather/iron armor. I find that hunting is a good way to increase sneaking, and archery.
The woods near the Riften stables are beautiful. The sounds of nature you hear are just awesome. The birds, wind, leaves, and even woodpeckers off in the distance. It's just a video game, but, man, it's just so..peaceful, hah.
Not sure if anyone has mentioned this yet, but if you want to level up your smithing to 100 very quickly, make a bunch of iron daggers. I would make my rounds through all the blacksmiths in Skyrim, purchasing up all their iron ingots and ore along with the same amount of leather strips. I would make a bunch of daggers and watch my levels jump up in seconds. Sell the daggers (you don't get much unless you enchant them) and repeat.
It's an exploit, sure, but legitimate nonetheless. I'm now wearing a nice suit of Dragonplate armor.
