Slight overclocking problems

I bought the following system recently:
Asus P5K Mobo
Intel Core 2 Duo e6750 @ 2.66
OCZ Reaper 2.0GB
Nviida 8800GT 512mb
Sonata III case
250gb HD

I'm currently in the process of overclocking my CPU. I have it running at 3.0ghz (375 x 8), but my problem lies with the likes of speedstep, tm2, etc. I used some quick OCing guides to overclock, and obviously it's best to disable power saving options in the bios. So I disabled C1E, TM2 and speedstep, i save my configurations and restart, and then when I restart and go back into the bios, I see that all the options are enabled. I can't seem to find the reason for this, any help would be appreciated.

Also, I can't seem to find the option for FSBRAM ratio.

I'm not familiar with the P5K but all those options should be within the BIOS. The C1E, TM2, and SS bit is a odd, try it multiple times perhaps? The RAM dividers tend to have all sorts of different names but from what I can tell, look for a field labeled "DRAM Frequency". Wish I could be of more help.

I've tried it multiple times, it is really annoying. I tried setting them all to disable (there are a couple other options in there), still nothing.

I read that I should set the DRAM frequency to 667mhz to get 1:1, but the lowest option I can choose is like 700mhz.

w/ your ram 1:1 it should read 750MHz (2x375Mhz, your current FSB while OCing) as your lowest option.
Have you read your manual to see what it has to say about the power saving features?
Have you reset/cleared your BIOS, then loaded defaults (save & exit) then try changing the values.

Ok, I think I've found the problem. I updated to the newest BIOS, and I didn't realise until after that it is a Beta BIOS. But I cannot downgrade to an older bios through either EZ flash, or ASUS update. I also do not have a floppy to use the DOS utility. What other options do I have to 1. Update the Bios, or 2. Boot up into dos?
