Speaking of that, since I haven't found a concrete answer from Google, should all installs be using UEFI now if the motherboard supports it?
Yes. You'll get faster boots from UEFI and can enable the secure bootloader. Make sure that you've got a GPT hard drive first, and fully disable legacy BIOS mode. (I think your graphics card also needs to support UEFI? I know my 980 had a newer BIOS version with UEFI support.)
