RP if you want to avoid some of the juvenile behavior, at the expense of running into some freakish RP behavior.
I like my PvE server, but sometimes I wish I rolled on a PvP one. Then I look at some the posts on the PvP servers' message boards and kick myself in the nuts really hard. I'm on the Shadowsong PvE server (Pacific Time Zone - 2 hours behind my actual time, which lets me play late nights and still see plenty of people online.) We just had the hardware upgrade, so our server seems pretty stable and relatively lag-free lately.
I love my 60 Hunter, but I've decided to seriously work on an alt. You could be my 3rd guild member!

You had your chance! BDF is great... Who are you on Shadowsong?
PvP servers are fun if you can have a lighthearted spirit about getting ganked, occassionaly camped, and having to leave your questing area to head elsewhere. If you're a short-fuse, you probably wouldn't like a PvP server. That said, killing the horde that's about to take your [mine/herb/etc] can be quite satisfying and having to always be "on your toes" makes for a more exciting game.
As far as class - play whatever you enjoy most, they all bring unique talents to the raids and theyre all useful.
Go mod-free for the first 10 or 20 levels to get a good understanding of the game, then if you feel inclined check out mods, make macros, scripting, etc. Theres so much there that if you try to check it all out you'll spend more time tweaking the game then playing it, and there arent really any mods I'd deem necessity until the late/end game.
WoW can be played casually, I think a lot of gamers just have very little self-control and a very competitive nature that makes them play 8 hours a day.

WoW...is a canned experience. It is a massive multiplayer game, but it definitely has little role-playing elements.
From someone who has played for about a year, my advice is to drop it and try something else. WoW kills brain cells and time. It provides short amusements very well, but nothing lasting. You will leave from it with nothing.
My advice, play out what time you have left then be happy that you were able to leave.
