I love listening to Paul Harvey and he mentioned a grapefruit pie on his show and said it was wonderful. He posted the recipe and I have had it printed for about two months. I am off to get the ingredients to make it.

Wow, that is an awesome idea. Will keep that in mind, but not for this one. 89 year old grandmother will be trying it. Will have it for Sunday lunch tomorrow.

Grapefruit Pie
(as mentioned on the air 12/8/05)

2 large or 3 medium red grapefruits, sectioned
1 1/2 cups water
1 cup sugar
3 tablesp. cornstarch
3oz box of Strawberry Jell-o?

Combine sugar and cornstarch, add water and cook over medium heat until thick and clear. Add Jell-o? and stir to dissolve. Cool and add grapefruit sections. Pour into baked pie shell and chill until firm. Top with Cool Whip? before cutting,

Six to Eight Servings

While it sounds like alot of sugar, I am sure it is needed to combat the tartness of the grapefruit. Will let you know how it tastes later..
