The baked bao is more awesome in general. The steamed ones arent bad. At yum cha, I typically get either. But the crispy pastry ones are even better

Chairman Bao sells out of their baked buns like all the time on Fridays at Off The Grid @ Fort Mason. I still haven't been able to have one yet... -.-

As a kid I recall seeing most bao on rice paper, but lots of places I go to now use regular paper (printer paper, even?)

I'm not sure. Some places still do use it - it is translucent clear/whitish after cooking, not sure what it is before.

I don't think rice paper would melt. It's not as though it were the stuff that is used around White Rabbit candy.

I think that is more waxed paper than rice paper.

The so called rice paper would not stand up to steam.
