I can contribute one more piece of "hitching" data.
When I run WoW on the second rig in my sig (e7200/8800GTS) I typically leave F@H (GPU client) crunching during play. >90% it's just fine and I cannot tell any difference. But on certain WUs I too get a slight hitch every second or two. Noticeable in the extreme - you go from smooth gameplay to a momentary lag/freeze and then back to smooth frames again. The first couple of times I saw it I thought my GPU was overheating or something but I finally figured out that simply turning off F@H when the problem occurs fixes things. And it definitely is only associated with certain work units - the vast majority of the time the crunching goes on in the background with zero detectable impact on performance.
