Joshua tree too far IMO. Death Valley would also be a solid entire day trip.

His first problem is assuming because it is illegal you can't buy it. I can't buy heroine or cocaine in the US either...

nope, no chef with a million dollar restaurant operation is going to risk it by selling banned meat and getting shut down by the USDA. so they either flat out lie and hope thier patrons dont know about the ban or they just sell the wagyu which is pretty much a US cow but at 4 times the cost of a non wagyu steak.


His second problem is that he is following strictly Japanese food naming law. And that is the same problem with champagne. I could get the exact cow, and replicate the exact conditions and have Kobe beef, but it isn't "real" because it wasn't done in Japan.

to be called Kobe beef it must come from Kobe Japan or its a fake. sorry but you can spin it all you want but if that Kobe steak did not come from a cow from japan its not Kobe.

personally i could not care, its just over rated cow. Give me a 1.5 inch T-bone from a open range grass fed cow from NE colorado or nebraska and im a happy camper.

You see Kobe beef on the menu all over Las Vegas and even across the United States. But that Kobe beef you're eating probably isn't true Japanese Kobe. Only one resort in the United States serves registered Kobe beef from Japan's Kobe Beef Council.

"Wynn, as you may know, is the only registered end user in the U.S.," says David Walzog, who serves the beef at SW Steakhouse. "We have a plaque and bronze pieces that announce that Wynn is that registered user."


Japanese chefs in LA have been getting real kobe for a long time, through "whatever" means necessary.

While, your standard "high end" place won't cater to such individuals who want something, quite a few will. You'd be surprised what money can buy.

I agree that US beef is better the Kobe (and all Japanese beef, in my experience), but the idea that it has to be raised and slaughtered in a certain area to be "real" is silly. It is the same as Champagne. I could get a few hundred kilos of grapes from the exact place as Cristal and using identical equipment, distill it in the same way in the US, however, it wouldn't be "real" champagne, as it wasn't from Champagne region in France. Identical product, just not "from the right place".

I am also aware a lot of deceptive marketing happens and stupid people fall for it. If you're paying $100 a steak, it isn't Kobe. Hell, it isn't even Wagyu. The last time I had Australian Wagyu, it was around $60 an oz. and you aren't ordering a 4oz cut...

I would strongly recommend Carnevino for steak. The guy who mentioned Kabuto is right. By all accounts that's your best bet for sushi without spending 3-5x as much on the strip, but you NEED reservations well in advance. Raku is one of the best restaurants in town which is a robata grill + more type place, and serves up a dynamite sashimi platter that will beat most everywhere else as well (also need reservations). Also, definitely go to lunch at Milos in the Cosmo. Best $20 you can spend. I would strongly suggest one of you pay the upcharge and order the octopus though.

Raku is indeed great, make reservations. $15 cab each way from strip.

If Raku is a robata grill place, I highly suggest going there. I haven't been to Raku, but haven't been to a few robata places, they are amazing. One near me open fairly recently, and it is easily my favorite place.

I was there last month, it's a cross between a sushi bar/izakaya/robata-ya. Their sushi selection looked really good (king crab legs on ice...) but far too baller for my budget at the time. We dropped 30pp but you can easily drop 200pp @ Raku.

Super hits - agedashi tofu, foie gras chawanmushi, pork cheek

Minor miss - tsukune. I get that it's jidori chicken and all but the lollipop nature of their serving meant less surface area for charred goodness and tare.

This place is THE best money you will ever spend in Vegas. For comparison, I went to Sumi Robata in Chicago last month, which was FANTASTIC but probably fell a little bit short of Raku. My friend who is a bigger foodie than me took me and he felt Sumi blew away some highly regarded NYC robata place.

Sumi is okay, but not the best robata in Chicago. I prefer Roka Akor's food, even if it isn't set up in the traditional robata style seating.
