You see Kobe beef on the menu all over Las Vegas and even across the United States. But that Kobe beef you're eating probably isn't true Japanese Kobe. Only one resort in the United States serves registered Kobe beef from Japan's Kobe Beef Council.

Japanese chefs in LA have been getting real kobe for a long time, through "whatever" means necessary.
While, your standard "high end" place won't cater to such individuals who want something, quite a few will. You'd be surprised what money can buy.nope, no chef with a million dollar restaurant operation is going to risk it by selling banned meat and getting shut down by the USDA. so they either flat out lie and hope thier patrons dont know about the ban or they just sell the wagyu which is pretty much a US cow but at 4 times the cost of a non wagyu steak.
to be called Kobe beef it must come from Kobe Japan or its a fake. sorry but you can spin it all you want but if that Kobe steak did not come from a cow from japan its not Kobe.
personally i could not care, its just over rated cow. Give me a 1.5 inch T-bone from a open range grass fed cow from NE colorado or nebraska and im a happy camper.
I would strongly recommend Carnevino for steak. The guy who mentioned Kabuto is right. By all accounts that's your best bet for sushi without spending 3-5x as much on the strip, but you NEED reservations well in advance. Raku is one of the best restaurants in town which is a robata grill + more type place, and serves up a dynamite sashimi platter that will beat most everywhere else as well (also need reservations). Also, definitely go to lunch at Milos in the Cosmo. Best $20 you can spend. I would strongly suggest one of you pay the upcharge and order the octopus though.
If Raku is a robata grill place, I highly suggest going there. I haven't been to Raku, but haven't been to a few robata places, they are amazing. One near me open fairly recently, and it is easily my favorite place.
You can spend 65pp at Raku on the omakase and you will be ROLLING out of there. Also, I have never not received sashimi when ordering the omakase. This place is THE best money you will ever spend in Vegas. For comparison, I went to Sumi Robata in Chicago last month, which was FANTASTIC but probably fell a little bit short of Raku. My friend who is a bigger foodie than me took me and he felt Sumi blew away some highly regarded NYC robata place.
Omakase is $75/$100 now.
