They are plenty of really bad cultures, that also have really great foods.

Perhaps he would be better off calling it gumbo as it looks like a liquidy stew without rice, but it would still be sacrilege in Louisiana absent a good dark roux.

we call it packs of dirty rice to make our jambalaya in Canada.

I will skip the seafood too. I will be using brown rice. I always use brown rice.

You can throw whatever in it. I do crawfish & andoille most of the time but that may be hard to find but you can do whatever you like in it and Still turns out good.

It's rather awesome, though I don't use sea insects in my jambalaya (well, most of my foods). Not that I entirely dislike shrimp, I just don't like it being in an entire dish.

I'm much more an etouffee or Gumbo man, but I cheat usually and use the Zatarain's box and just add more vegetables to it. That said, I have made gumbo 100% from scratch slowly cooking the roux and trying like hell for 45 minutes not to burn it...
