I like me some seriously hot food. It's gotta have a good flavor though, I'm not a fan of just pure heat.

Quaker Steak and Lube's atomic sauce is a good example. It's just plain hot and tasty nasty. I can take the heat, but can't stand the taste.

I'm the last person to go to bat for some of my ill-informed, un-cultured, barbaric brethren in my great home state. Shit, we don't even agree on how to properly prepare something as simple as pulled pork or whole hog.

That guy up there ^ is almost certainly a carpet-bagger from SC, as part of some nefarious ploy to infiltrate and leave a stain attached to NC BBQ. SC is getting desperate, I think.
You guys up in NC have some good BBQ, but Tennessee/Georgia/Virginia though...

Best BBQ I've had in my life (grew up in TX) was at B's Cracklin' in Savannah GA. That man sold his soul to the devil or something.

That is pretty much my favorite dish since I was born/conscious enough to remember it. You will find it at any NC BBQ joint as well, and I now make 2-3 gallons every couple of months.

IIRC, some folks in VA seem to think they have equal claim to the original Brunswick stew...not sure how that checks out.

ATOT, what do I do for lunch: fish tacos or shake shack for a chicken sandwich. i can't decide...

on one hand, it's buy 3 tacos get 1 free. on the other hand, all this talk about CfA makes me want a chicken shack.

Hostess Frozen Ding Dongs:



They rate a solid "meh". Stick with freezing actual Ding Dongs (and Girl Scout thin mints, om nom nom) for a better experience. Not as disappointing as Twinkie Ice Cream, but I definitely wouldn't buy them again. There just wasn't anything redeeming about them...the ice cream filling wasn't quite right (it was like cheap churned ice cream with freezer burn), the cake part was too dense & dry, and the chocolate coating fell off in slates (very messy to eat). I think I will donate these to work.

Peanut Butter Ho Hos:



These were actually pretty yummy. They replaced the regular white cream with peanut butter cream, so you get peanut butter in every bite. I had low expectations but was pleasantly surprised...would buy again.

These were actually pretty yummy. They replaced the regular white cream with peanut butter cream, so you get peanut butter in every bite. I had low expectations but was pleasantly surprised...would buy again.
But the white cream was the best part! I guess I do like peanut butter cups, so they might work... much would probably hinge on the texture of the PB filling.
Not that I'd use my dessert calories on that over a magically delicious Kinder Happy Hippo, of course.

If I had the time and money, I'd seriously go on a food trip of the US.

Now that I can eat food again (yay medicine), I'd love to do that some day...a full summer tour of awesome food spots around the U.S.

Just imagine they whipped the white cream with the peanut butter to make a PB cream. It's pretty good! I think it could actually use a tad more cream though. The PB layer is fairly thin...which works with the white cream version, because the cake itself is light & has a thin chocolate coating, but you want more creamy peanut buttery goodness when you eat these...but it is just enough to make you happy. I bet this would be an awesome homemade recipe...I know there's some technique for rolling homemade swiss rolls, but I haven't tried it yet...

not all hot sauce is meant to be numbingly, stupidly hot. Much of it, historically, is actually about flavor. It's mostly the modern capsaicin morons that have marketed these highly unnatural peppers and ridiculous scoville numbers into "Sauces" that are designed for every thing but flavor...just pain.

I like hot, but at some point people are going to realize how dumb they've been with much of this. That being said, yeah: Texas Pete never was hot (they do have newer varieties of habenero and all that, though), and was always milder than Tobasco. For what it's worth, Louisiana Crystal (far more popular among locals than Tabasco ever was), is just as mild as Texas Pete. They are nearly identical. It's just a different thing.

Flavor is important because I don't deal with unnecessary bullshit like Ketchup or Mayonnaise. I like Hot sauce on my fries because the proper one for fries provides the only thing that is ever needed on potatoes: vinegar and a little salt. Some extra cayenne without all of the flavor-murder is a nice bonus. I'm more an more convinced that the "most be hotter than Hades!" hot sauce people simply don't care about food--just like Ketchup eaters!

People apparently taste capsaicin differently. I've eaten sauces which barely register as spicy where other people eat them and can't talk for ten minutes. A lot of the really hot sauces do have flavor, especially stuff made with habanero peppers. They taste sweet and almost chocolatey. I eat some of them out of a spoon just for the flavor.

I love habanero flavor. it is one of my favorites, actually. Some may consider this sacrilege, but I want to hybridize some non-hot, rather mild (closer to jalapeno) peppers in order to get the flavor profile without the hot (I do like the heat of habanero, though--don't get me wrong), because I think that opens up the uniqueness of that taste (I like to think of it as the "sixth" taste, after whatever umami is supposed to be ) to all sorts of dishes, that far more people could enjoy. ....and this has been on my mind for many years. In the meantime, I've seen this explosion of "habanero lime! habanero ice cream! habanero shoe leather!" or whatever...so obviously I'm onto something but also, as usual, way too late to capitalize.

afaik, though, no one has such real peppers. They only have fake flavor salts that simulate the taste (basically how jelly beans and pretty much every "food" in a box are made).
