not all Chinese foods popular in America are "fake" Chinese foods, though many are. Crab rangoon is definitely an American invention, as people in China and Chinese people will have no idea what that is (Chinese cuisine generally doesn't include cheese as an ingredient). Same with pupu platter (wtf is that?) Kung Pao chicken is a real chinese dish from the Sichuan province, but the 'real' version is very spicy and very flavorful. The americanized versions are tamed down for the american palette.

Even most of the'real' Chinese foods you will find here are of the souther guangzhou/cantonese variety. Luckily I live in San Jose, so there are a decent number of places that specialize in Northern, Sichuan, Shanghai, Chinese-Muslim, etc. etc. styles that most americans are probably not familiar with.

WTH is Crab rangoon.

Roast Duck tastes better than any "americanized" Chinese food. Theres not a lot of regular Chinese food stores outside ethnic communities because most people who run them usually want to serve their own ethnic base. Those who move outside ethnic communities actually do better in terms of profit in most cases, but at the same time don't really care for the work since they think or find out that they have to adjust their cooking to a more white palate. Chinese food outside ethnic communities usually costs more and tastes worse.
Whether or not it is true that they would have to change their food probably depends. I mean crap 80% of the reviews on yelp say many Chinese restaurants in the seattle international district are not authentic enough and most of those reviews certainly are not by Chinese or even Asian people.

By my College campus (University of Washington Seattle) most of the Vietnamese restaurants are pretty good and most of them don't serve Americanized style food or anything (save the free cream puff balls). So theres an example of there being more authentic stores.

Yes, well there is no real chinese food around that I know of. I'm sure there is somewhere in the burbs, but I'm not aware of any so it doesn't really matter.

True, but I don't see how this chinese food is any more or less real than such things like wontons, rangoons, kung pao chicken, etc. They're all foods that are eaten in China and as such are typically classified as chinese. Personally I'm a big fan of Middle Eastern variety foods nowadays like lamb shanks, beef shawarmah, stuffed grape leaves, falafel, and sheesh kifta. Have an awesome restaurant nearby called Jerusalem that does a great job on all of these and another called Ya Hala that I prefer the shawarmah from.

TBH, no I'm not sure of that. There's a good chance that what we classify as chinese food really isn't chinese food at all. It may perhaps be inspired by traditional chinese dishes or influenced in some other shape or form though I suppose. I have had some authentic chinese though like szeschwan whole duck it was pretty darn hot though I must say, I must've drank several glasses of water just for that one duck.

its not traditional.


and there are many regional foods, china is a big place. larger asian malls in the bay area you'll see a load of different restaurants. they dont all serve the same stuff. if you look around in a restaurant and everyones white...well thats ur clue its not going to be any good

When I was visiting in Seattle, we ate at 663 and it was good. Liked Homestyle too, but yelp says they're under new ownership so I don't know what's different.

American Chinese is probably the most disgusting exploitation of an otherwise great cuisine. Tex-Mex is probably a close second, imo.

Real Chinese is delicious, flavorful, spicy and exotic. I want Sichuan peppercorns that make my mouth explode in flavor, and I'll drown it with hot chili oil. Expertly prepared, Chinese (especially Sichuan, imo) is probably the most flavorful cuisine on the planet.

Luckily, Atlanta has a thriving international population with great Chinese places all over. I'm almost always the only "round eye" in these places, but they're very nice and always laugh when they see me sweat from spice.

That's all I have to say. I can't believe that some people here think American Chinese is better. Thankfully I think America is experiencing a culinary renaissance where people will continue to demand real, healthy, flavorful, traditional foods.

So how would a person distinguish real Chinese food from its "disgusting", "Americanized" counterpart? Or is American's "shitty palates" incapable of telling the difference? Is there a special meter that I can buy at DealExtreme or an interrogation technique I can perform on my local Chinese Restaurant's owner and staff?

Yup. Real Chinese food is not something I want to eat. I watched this news special on Sars and they went to a Chinese market and you wouldn't believe the shit they eat. Disgusting. No wonder stuff like Sars originated from there.
