I just made this because of this thread and as soon as I got to the part where you put it in the blender I tasted it and thought "yeah this is okay but it just tastes like liquid broccoli" so i dumped in cream cheese, minced red onions, and pepper and it tasted like a real soup after that. Ramsey fail. His tip about making sure you don't overcook the broccoli is key though.

Did you also add a broth?

i completely agree.

its funny, because much of the quality of a dish is determined by the person who eats it. everyone has different likes, but ramsey yells at people for doing things differently then he does it. you see it on kitchen nightmares all the time, the people swear up and down that they like what they cook, and ramsey makes them feel like theyre stupid for it.

then he makes them say "oh, i love the new food ramsey has prepared for our menu!" and at the end of the show they state how the owners went back to the old menu

Crème Fraîche

It's not sour cream, but sour cream is a good substitute.

It's actually quite easy to make your own.

1 part milk +
1 part (sour cream or plain yogurt)

Stir it up, put it in a sealed container, and leave it on your counter for 3-4 days. I've done it several times and it works great. You may have to use a higher fat liquid (ie, half and half or cream instead of milk) depending on the fat content of the yogurt you use.

The rage is just the American TV persona- encouraged by the producers. He's not even like that in any of his original UK shows or anywhere else. I guess it's kind of insulting the US audience of cheap entertainment.

And of course, who doesn't love Alton Brown. But he professed himself he's not really a chef- just a fan of cooking and analyzing.

That is not true. He really is like that. Check out the BBC documentary "Boiling Point". It is available on YouTube and follows him before he was awarded his 3rd Michelin Star when he opened up his first restaurant.

EDIT: If anything, he has gotten more tame and relaxed.
