Tobasco Sauce

I got a bottle of Tobasco (original pepper) from Costco a couple years ago, so you can imagine how big the bottle is (wasn't in bulk though). I haven't used it in a while but I did today, and the sauce seemed to be a LOT hotter than it was when I first bought it.

Anyone else notice that the sauce gets hotter as time goes by?

perhaps it "ages" like cheese can. I have found the flavor is not as good the older it is. A good hot sauce should have some sort of taste besides just being HOT.

I think it's aged to begin with, so I wouldn't be surprised if longer=hotter

did you shake up the contents? maybe the contents settled over time. . . .try louisiana hot sauce, i find it has more flavor than tabasco

Maybe just how old the root of the pepper before it gets pulled & mashed. I don't think it will get any hotter sitting in a jar. Well..maybe if you left it on a stove or in the sun.

I wouldn't be surprised if the contents of the bottle tend to clump. So you end up with a less even distribution of spiciness.

tabasco isn't hot sauce... it's pepper flavored vinegar

The primary liquids in tobasco sauce are vinegar and water. If they evaporate the amount of pepper per ml goes up.

...that said, tobasco sauce ranks as "crap" on my list of hot sauces. Try Cholula or Crystal depending on your tastes

Come to think of it, they don't sell too many "Hot Sauces" at my local Pathmark.

I don't like Crystal because it's not my taste, but it does have a lot more flavor to it.
