Today...I made chili

1 pound hot sausage
1 big onion
1 can mild chili beans
1 can pinto beans
1 can tomato juice
Plenty of chili powder, spices and such. It was freaking awesome.

Lol, glad you enjoyed making chili and eating it. The part of your recipe that made me laugh though was "Plenty of chili powder, spices and such." That's roughly akin to "and then a miracle happened."

I like using a blend of chiles including ancho, chipotle and, paprika. Not to mention, plenty of cumin and a dash of oregano.

Chili is one of the very, very few things I can cook that actually tastes good. My "spices and such" come from the blends I use when I cook the meat. Today I used garlic, pepper and then a blend of stuff that I had bought for grilling. Its not super noticeable, but man it tasted awesome.

I always change my spices. A health dose of cumin, some cayenne and garlic are always a given, but then it is a pile of whatever fresh peppers I can get and feel like cutting up, and whatever spins up on the lazy susan of spice death.

Rudeguy - first off congrats for trying and enjoying it. I am only here to help so that you can discover your own personal chili bliss.

Start with your base and brown your meat, whatever meat it is that you like and seaons lightly, you want browning so get some color on the meat for me this is 6 on my dial...you're not stewing the meat, you're browning it.

Then toss in your veggies and turn the heat down, you're sweating them here and picking up some of the fat/spice flavor in the pot, drain however much fat you like from the meat beforehand. Season as you see fit, but lightly.

OK! Now you have a decent base for a stew. Toss in your tomatoes, sans liquid, and deglaze that pan. Toss everything else in and cook at a simmer to blend everything. Taste and season as needed, use a tablespoon of sugar if it gets too tart/spicey.

Use chicken or beef stock as liquid to get consistency you need, taste and season 20 minutes before serving. The point here is don't dump the juice from the beans or maters in unless that's what you want, reserve the liquid from the maters and taste it to see if you want to put it in. That's too much juice. Tomato paste is also your friend.

Most important part? Taste it the whole time to find what you like.

Plenty of chili powder, spices and such. It was freaking awesome. cayenne pepper, season to taste.

Not bad, here are a few replacement suggestions in bold. Not as sloppy looking as regular chili. And remember, chili doesn't have to burn your taste buds to be good.

Thanks for the tips! I like the idea of using stew meat. For sure going to try that next time. I use tomato juice because I can't stand the texture of tomatoes. I seriously gag just thinking about it.

cayenne pepper....why didn't I think of that?

Chili is a personal preference and also regional. But the basics are the same, you're essentially making a stew which means you have to start it off as such. It's the "layering" of flavors that makes is so good.
