Actually, if you're overclocking, and want to be sure where your limit is, two are preferred.
If you're leaving it stock pseeds, or midly OC, one is fine.
It is possible (at upper OC limits) for one core to pass when one might fail.
Also, if you're stessing for heat max settings, two cores running will produce more heat.

Run TWO instancies ALWAYS even if you are hypertreading!

One will only load half the bucket jobs and not tell whole storey of instable processer units.
