I have not long come back from China myself. Went for 2 weeks.

Did Beijing, Xi,an, a 3 day cruise on the Yahzee river, Cheng du and one more place that name escapes me at the moment.

Fantastic place and my highlights would be what everyone else is saying "The food". Amazing food.

Despite not speaking a word of Chinese I felt very safe doing a lot of travelling and going to places where no one spoke a word of English. I would deffinately go again.

Had one of these I believe. They give it to you with a straw in it. Takes some getting used to eating a Baozi with a straw.

You know what I love about China? The mound of fried potato strips. Those are amazing.

Having lived in Beijing for over 8 years and going back to visit every couple years, I find that the amount of change the city undergoes amazing. Even my parents who grew up in that city can no longer recognize half of the city.

I would be careful about some of the smaller street food vendors though. I've seen some nasty shit go down in those places in the name of profit. People salvaging one time use plates from the trash and reusing it, ect.

Fried potato strips? There is one dish I can think of sort of like that but not exactly. Is this a Beijing dish? I should mention two things about the street food. I got a dual HEP A+B vaccine before I left. Also most of the stuff I eat on the street is "finger food". That which is not has so far always been served in reusable dishes/bowls not throwaway. They may not always be the cleanest sometimes but I look the other way Also we stay away from the stalls that look iffy to begin with. I've had the runs on several occasions but nothing worse. Stomach aches and the runs usually result from not building up a resistance to local sanitary conditions and does not mean out right food poisoning. In the west we are used to hyper clean environments so our stomachs don't yet he the flora for handling some of the comparably less clean environments you encounter overseas. This is far different from food poisoning though. In a few weeks most people acclimatize. I'm not underestimating things though, my father came down with a serious case of food poisoning about 10 years ago when he visited China. One of the reasons I stay away from seafood.
