what kind of wood and what temps? I've smoked chickens before...wasn't impressed. Been meaning to try a turkey.
Apple or Cherry wood and smoked at around 250 for 4-6 hours. The trick is to let the smoke wood burn off for an hour before putting your bird on there. Otherwise it will come out *too* smokey tasting.
