what kind of wood and what temps? I've smoked chickens before...wasn't impressed. Been meaning to try a turkey.

Apple or Cherry wood and smoked at around 250 for 4-6 hours. The trick is to let the smoke wood burn off for an hour before putting your bird on there. Otherwise it will come out *too* smokey tasting.

Thanks for the tips guys. I'll have to try one some weekend. Might just do a whole breast.

And for anybody knocking roast turkey...you have to provide the aromatics for a good roast - seasonings, stuffing and plenty of whole herbs. And stop opening that oven!

Strain it, filter it, put it away, use it next weekend for a huge batch of chicken wings for the christmas party!

You asking what I like or what we're doing this year?

Goign to T-day at Mom's house so it will be cooked in the oven. We have a fried that we used a few years ago but it was so damn windy it barely stayed hot enough. We had to get out plywood and make a mini shelter for the fryer. But it tasted good.

Well, I like Alton Brown on the food network. He did a whole episode on frying one.

Frying a Turkey minus the safe tips

Half the episode centered around not torching yourself. Something that caught my attention and not really outlined well in the recipe notes is that about halfway through the temperature of the oil will start to go up quickly due to less water coming off of the bird. If it gets above 400 it turns the taste apparently.

I want to smoke my turkey this year, but alas, no smoker...am thinking about grilled turkey breasts/thighs...
