I wonder if it has less fat than ox tail. Ox tail has quite bit of soft fat. $10 /lb is pretty expensive but bison tail isn't something you can find in normal supermarket. Costco Business Center has ox tails in 5 pound packages for $5.29 /lb. I'm going to pick some up tomorrow after work along with beef cheeks.

Turkey is good. But turkey overload non-stop for a week (and probably more depending on leftover load) just to be followed up with a similar week around Christmas, is not good. That is why I advocate mixing it up a bit let Thanksgiving day be unique. You can still force down turkey everything else from Nov ~20 to Nov ~30 and Dec ~20 to Dec ~30 as everyone else in the country will be trying to offload huge piles of leftover turkey.
You do need to eat your steak within a week. But those who know what they are doing (and that are willing to cut away massive quantities of spoiled bits) can age them far longer.
