I have no frame of reference, but I'll definitely report back on dinner. My mother's balking at the tail, so she said she was gonna get a small piece of meat for herself as backup :^DI never had bison tail but would love to try it. I wonder if it has less fat than ox tail. Ox tail has quite bit of soft fat. $10 /lb is pretty expensive but bison tail isn't something you can find in normal supermarket. Costco Business Center has ox tails in 5 pound packages for $5.29 /lb. I'm going to pick some up tomorrow after work along with beef cheeks.
