Wrong. The flat surface prevents small pieces of egg shell from breaking off. I can crack a dozen eggs in 10 seconds with this method. Everyone knows this.

Cracking an egg on a flat surface isn't necessarily harder to open.
It doesn't really matter though. The only reason why people do it on flat surfaces is to avoid bits of the shell falling in as they crack the egg. I crack the egg on an edge, and I rarely, if ever drop a piece of shell in.
The only time a piece of shell falls in is if I try to get fancy and crack the eggs with one hand.
lol, the sad thing is, I cook a hell of a lot more than my brother does yet he can crack an egg with one hand and I can't.
