Ok, I want some. I like fatback so this should be right up my ally. Wonder if any restaurants serve it.

me and the gf made 6, in hindsight I'd eat 2.

that parsley salad is the shit w/ the marrow.

How do you prepare the marrow, boiling?

I just roasted the bones in a cast iron pan for about 30 minutes. Pulled the marrow out with a knife and fork, ate it, then put the bones into a stock pot to make some stock.

I love bone marrow and use the Bourdain recipe as well. I have talked quite a few people into trying it and there's usually no middle ground. People either love it or hate it. Most love it once they get over the fact that they're digging out bone innards.

Fish skin is OK. The fish has to be absolutely fresh and cooked properly and it's great. When it's bad though it really sucks.

An overlooked piece of meat that most people don't ever bother with is a pork blade steak. They are very inexpensive and come out great when quickly seared then braised in chicken stock in the oven for an hour and a half or so @ 325F.

I cant believe how many people dont eat the skin on chicken.

Turkey skins too.

In my family, we fight for the skins (especially when its that crispy golden brown, mmm)

Thus the reason I love going to my girlfriend's for thanksgiving. All the skin I could ever want.

Wait you ate the marrow raw or cooked? From the way you worded that it sounded like raw. I'm sure you can eat it raw but I'm not sure how safe that is. Marrow is actually served up at many higher end restaurants and many ethnic cultures eat it all the time.

Organ meat of any type should be at the top of any such list. It's taken me a long time to come to terms with most of them but I'm slowly coming around. From the point of view of nutrition It's insane that we don't eat this stuff much. When cooked right it CAN taste great. But like I'm saying I'm slowly trying to "deprogram" myself to enjoy organ meats. Still don't like most.

I use bone marrow in my chili, my ham and lentil soup, my beef stew, pretty much any dish I can.

My thought is that people don't like the idea of bone marrow and they shy away from some of the 'trash' cuts like flank/skirt steak, shanks. I love osso buco(especially for the marrow) and braised beef short ribs are simply outstanding.

Cooked. I roast the bones before I make stock. Some of the inner parts of the marrow were still somewhat pink, so I guess I had it "medium".
